After initial fermentation, we cooled the must to extend the fermentation of this Pinot Noir. A normal fermentation takes around a week, or maybe two. It took nine months for Once in a Blue Moon to fully ferment. It is a tricky endeavour, but when it works you get a super smooth, rich wine like no other. This has been one of most popular wine of all time, and our supplies are very limited.
